Sweet Corn Soup
Sweet Corn Soup with a hint of spice

A delicious sweet corn soup, so satisfying as if you are eating those sweet corn kernel right from the cob. This rich creamy soup made of sweet corn with a hint of spice is going to warm everyone’s heart.


Ingredients :                       Serves 4

  • 2 sweet corn cobs
  • 5-6 shallots or 1 medium size onion
  • 1 small ginger
  • 4-5 garlic cloves
  • 1 green chili
  • 1 tbsp ghee
  • 1 bay leaf
  • 1 tsp cumin seeds
  • few saffron strands
  • 1/8 tsp chaat masala
  • 1/4 tsp black pepper
  • salt to taste
  • coriander or parsley leaves to garnish
  • spring onion greens to garnish
  1. Finely chop the onions, ginger, garlic and green chili. Carefully slice off the corn kernels from the cob.
  2. Heat ghee in a pan, add bay leaf and cumin seeds. When the cumin starts to splutter, add chopped onion, ginger, garlic and chili to it. Saute on low flame till onions turn translucent.
  3. Add the corns and saffron and cook for another 2-3 minutes
  4. Add 2 cup of water and bring to a boil. Add salt.
  5. Once cool, remove the bay leaf and puree the mixture in a food processor.
  6. Pour the mixture back into the pan, add water if needed to get the right consistency, cook for another few minutes.
  7. Remove from flame, stir in the black pepper and chaat masala.
  8. Garnish with chopped coriander leaves and green spring onions.
